Ingredients: 5 Cape Gooseberries – husk removed and halved.,4 Fresh Figs – quartered,1 Onion – sliced,1 Cucumber – halved and sliced,3 Iceberg lettuce – torn,Fresh Herbs – Handful like basil,2 tablespoons Extra Virgin Olive Oil,1 tablespoon Honey,2 teaspoons Lemon juice,1/2 teaspoon Lemon zest,1 teaspoon Black pepper powder – (or as required),Salt – to taste

Instructions: To begin making the Cape gooseberry salad, first make the dressing.In a small bowl or glass jar whisk together the ingredients under’ for the dressing’, the lemon juice, olive oil, honey, lemon zest, black pepper powder and salt.In a mixing/salad bowl toss together the cape gooseberries, figs, onion, cucumber and lettuce.Drizzle the dressing over the vegetables and fruits and toss the ingredients well to combine.
