Ingredients: 1 kg pumpkin, 2 tomatoes – chopped, 1 capsicum (green) – chopped, 1 green chili – finely chopped, 1/2 teaspoon mustard, 1 teaspoon cumin, 1/4 teaspoon fenugreek seeds, 1 teaspoon turmeric powder , 1 teaspoon sambar powder, 1 tablespoon jaggery, 1 teaspoon oil, salt – as per taste

Instructions: To make pumpkin capsicum vegetable, first heat oil in a pan. Add mustard seeds, cumin seeds and fenugreek seeds. Allow to cook for 10 seconds. After 10 seconds, add green chili, capsicum and let it cook for 2 to 3 minutes. Now add turmeric powder, red chilli powder, tomato, pumpkin, sambar powder, salt and jaggery. Mix and let it cook for 2 minutes. Allow the pumpkin to cook. After cooking, turn off the gas and garnish with green coriander. Serve the Pumpkin Capsicum vegetable with Phalguni Dal and Tawa Paratha.
