Using a fork, mash the potatoes well and check the seasoning and adjust to suit your taste. Keep the mashed potato mixture aside.Apply extra virgin olive oil on the bread slices and cut them into half. Spoon the potato mixture over the bread slices and spread it evenly on the top.Preheat the skillet on medium heat and place bread with potatoes on the baking tray and cook it on both sides like a patty.
