Ingredients: 2 Seaweed Sheets,1 cup Cooked rice,1 Carrot (Gajjar) – cut into thin strips,1 Cucumber – cut into thin strips,1 Avocado – cut into thin strips,1/2 cup Rice Vinegar,1 tablespoon Sugar – (Adjust according to your preference),Salt – to taste

Instructions: To begin making the Vegetarian Sushi recipe, cut the vegetables into thin strips. Add salt and mix thoroughly. Keep aside.In a mixing bowl, take rice vinegar, sugar, add rice to it and mix.Take one seaweed and spread rice mixture over it in a thin layer. Don’t cover the edges.Arrange the vegetables in a single line. Don’t overcrowd.Start rolling it. Press it so that the roll gets tightened.Cut the roll into half first with a sharp knife. Don’t put pressure on knife while cutting.Just make back and forth motion. Cut them into 1/2 inch thick pieces. Serve Vegetarian Sushi with soy sauce.Serve Vegetarian Sushi as a side dish along with Spicy Vegetable Noodles and Chilli Paneer Recipe for a weekend lunch or dinner.
