Instructions: To begin making the South Indian Style Tomato Quinoa Recipe, prep all the ingredients and keep it ready.Heat a pressure cooker with ghee over medium heat; add in the mustard seeds and allow it to crackle.Once the mustard seeds crackle, stir in the garlic ,ginger and onions and saute until the onions soften.Once the onions are softened add the curry leaves, tomatoes and saute until the tomatoes become soft and mushy.Once the tomatoes become soft and mushy, stir in the cardamom powder, turmeric powder, garam masala powder and sambar powder. Mix well to combine. Add 1 cup of quinoa into the pressure cooker and 2 cups of water.Pressure cook the Tomato Quinoa for about 4 to 6 whistles and turn off the heat. Allow the pressure to release naturally from the Tomato Quinoa.Once the pressure has released, stir in chopped coriander leaves.
