Ingredients: 2 अंडे – उबाल कर,7 काजू,1 प्याज – काट ले,1 टमाटर – काट ले,2 आलू – छीलकर काट ले,1 इंच अदरक,3 लहसुन,2 छोटे चम्मच धनिया पाउडर,1 छोटा चम्मच लाल मिर्च पाउडर,1/2 छोटा चम्मच हल्दी पाउडर,1/4 छोटा चम्मच गरम मसाला पाउडर,1 बड़ा चम्मच सौंफ,2 बड़े चम्मच हरा धनिया – काट ले,2 टहनी कढ़ी पत्ता,तेल – प्रयोग अनुसार,नमक – स्वाद अनुसार

Instructions: To make Kerala Style Egg Cashew Curry Recipe, first soak cashew nuts in the pan for 15 to 20 minutes. Now heat the water in a saucepan. Add eggs and cook for 15 minutes. Remove the skin, cut it in half and keep it aside. Now in a mixer grinder add some water with cashew nuts and make a paste. Keep it aside. Now in a blender add onion, tomato, ginger, garlic, green chilli, turmeric powder, coriander powder, garam masala powder, fennel seeds, add some water and grind it. Keep it aside. Now heat oil in a pan. Add mustard seeds and cook till it crackles. Now add curry leaves and cook for 10 seconds. After 10 seconds, add onion tomato paste and cook for 4 to 5 minutes. Add 1 cup of water, potatoes and let it boil. Add salt, cover the pan and cook till the potatoes become soft. After the potatoes are soft, add cashew paste and mix. Cook for 3 to 4 minutes.
