Ingredients: 12 arbi – finely chopped, 1 onion – chopped, 2 tomatoes – chopped, 1 teaspoon ginger garlic paste, asafetida – a pinch, 3/4 teaspoon turmeric powder, salt – as per taste, 3/4 teaspoon Red chili powder, 3/4 teaspoon garam masala powder, 2 green chillies – finely chopped, 3/4 teaspoon coriander powder, 2 dry red chillies, oil – as per use

Instructions: To make tomato onion curry arabi vegetable, first wash and soak the arbi in salted water for 10 to 15 minutes. Drain and wash again. Dry it Now heat oil in a pan. Add arbi to it and cook till it becomes golden. Remove it on a paper towel and keep it aside. Heat a little more oil in the same pan. Add dry red chillies, asafetida, ginger, garlic paste and cook for 1 minute. Now add onion and cook till the onion becomes soft. Add turmeric powder, red chili powder, salt, coriander powder and garam masala powder. After 1 minute add tomatoes and green chilies and cook it for 3 minutes. Now add arbi to it and mix well. Cover the pan and cook it for 6 to 8 minutes. Serve hot. Serve the tomato onion arbi vegetable along with boondi raita and phulka for dinner.
