Instructions: To begin making the Kale And Vegetable Fried Quinoa recipe, cook 2 cups of quinoa with 4 cups water, a spritz of olive oil and 1/2 teaspoon salt. Bring the quinoa mixture to a rolling boil on high heat, about 5 minutes. Lower the heat, cover and let it simmer until they are cooked completely, about 10 minutes. Fluff the quinoa with a fork and set aside to cool.Add a tablespoon of olive oil and minced garlic into a pan on medium heat. Add in onions, peas and carrots. Turn the heat to medium high and saute for a few minutes.Add in the chopped kale and saute for 2 minutes. Toss in the quinoa and combine the mixture.
