Ingredients: 1/2 cup green moong dal – soaked for 3 hours, 2 cups fenugreek – finely chopped, 2 tomatoes – finely chopped, 1 onion – thinly sliced, 4 green chillies – chopped, 1 teaspoon cumin seeds, 1 Teaspoon ginger – grated, 1 teaspoon cumin seeds, 1/4 teaspoon turmeric powder, 3/4 teaspoon coriander powder, 1/2 teaspoon cumin powder, asafoetida – a pinch, 2 tablespoons oil, 1/2 cup Water

Instructions: To make Moong Dal Methi vegetable, first heat oil in a pan. Add cumin seeds and let it cook for 10 seconds. After 10 seconds, add green chillies, asafoetida and let it cook for a few seconds, now add onions and cook till the onions become soft. After the onion becomes soft, add ginger, tomatoes and let it cook for 2 minutes. Now add moong dal, turmeric powder, coriander powder and cook for 1 minute. Now add 1/2 cup of water, salt and mix it all. Cover the pan and let it cook for 7 to 8 minutes. Add the fenugreek and cook for another 2 to 3 minutes. Serve hot. Serve fenugreek moong dal with Rajasthani kadhi and phulka for dinner.
